Sweet Cherry Tomato & Roasted Peppers Soup

Ingredients
  1. 1 x red pepper
  2. 1 x yellow pepper
  3. 1 x small onion
  4. 2 x cloves garlic
  5. 12 x cherry tomatoes
  6. 1 x vegetable stock cube
  7. 1 tbsp of vegetable oil
  8. Crushed black pepper
Instructions
  1. Heat oven to 180 oC (350F)
  2. Chop pepper into chunks, peel onion and chop into chunks
  3. Place peppers, onions, garlic and tomatoes onto a large baking tray and drizzle with oil
  4. Place baking tray into oven and roast for 15 mins
  5. Prepare stock by dissolving stock cube in 1 pint (0.5 litres) of boiling water
  6. Remove vegetables from oven and empty into a large saucepan and add stock and seasoning, bring to boil & simmer for 10 mins
  7. Remove from heat and using a blender blend until smooth

Ingredients
  1. 2 x tins of chickpeas grounds or mashed up
  2. 1 x onion
  3. 1/2 stock cube (low salt option)
  4. 3/4 jar of Tahini
  5. Garlic, chilli, coriander or any other herbs to flavour
  6. Sweet chilli sauce to serve with
Instructions
  1. Put everything in a bowl and mix together.
  2. Take a good heaped spoon of the mixture and make into a burger shape.
  3. Put in the oven 180C for 20 minutes, may need longer if thicker burgers.
  4. Serve on a bed of spinach or lettuce and salad.

  2. 2 x peeled Oranges (don’t put oranges in a juicer with their skin on)
  3. ½ cm chunk of fresh ginger root

  1. Put all in a juicer and blend until smooth.

Ingredients
  1. 250ml almond/rice/soy/oat milk
  2. 1 heaped tbsp cacao power (raw cacao is a great antioxidant)*
  3. 1 handful berries such as raspberries/blackberries, or one pear
  4. ¼ – ½ avocado
  5. Squirt agave nectar
  6. 1 tbsp flax oil **
  7. Sunflower/pumpkin seeds
  8. 1 tbsp Lecithin**
Instructions
  1. Put everything into a blender and blend.
Notes
  1. *Cacao powder can be purchased from Tree Harvest T: 01297 552977 more local Harvest in Bath does sell this.
  2. **Flax Oil can be purchased from Cytoplan T: 01684 310099, this is a practitioners supply company, but if you quote my name you can purchased from them.
  3. **Lecithin, is an emulsifier which helps the body break down bad fats and takes the good fats to where it is needed. The product is called Phospholec and can be purchased from Cytoplan.

Ingredients
  1. 2 x tablespoon oatbran (this can also be made with spelt flour, buckwheat flour for a change)
  2. 1 x Egg
  3. Dash of milk or water, if needed
  4. Cinammon and/or mixed spices to taste
  5. Raisins – optional
Instructions
  1. Mix everything in a bowl and make as a normal pancake.
  2. Add goats milk yoghurt, pureed fruit, Agava Nectar or Date Syrup to taste.
